Cashmere goats, known as the “national treasure,” are a specialty of the northern mountainous region of Zhuanghe, and goat soup made from them is another distinctive local delicacy. The best time to enjoy it is after August each year. The soup is bright in color, milky white in appearance, with a rich texture and abundant nutrients, yet it is neither gamey nor fishy. When eating, take the finely chopped goat meat and offal from the pot, place them in a bowl, then pour in steaming hot goat broth. Add seasonings such as refined salt, vinegar, and mustard for an exceptionally delicious taste that is truly unforgettable.
