Stir-fried Beef with Celery
Ingredients
300g tender beef, 150g celery, 40g Shaoxing wine, 20g soy sauce, 10g sugar, 5g baking soda, 20g water starch, 1g pepper, 20g scallion and ginger slices, 2g minced ginger, 500g peanut oil, a pinch of MSG.
Preparation
1. Slice the celery thinly. Cut the beef horizontally into 2cm-thick slices, place in a bowl, and mix with baking soda, soy sauce, pepper, water starch, Shaoxing wine, minced ginger, and water. Marinate for 10 minutes, then add a bit of cooking oil and marinate for another hour.
2. Heat a wok over medium-high heat, pour in peanut oil and heat until 60% hot. Add the beef slices, stir with a spoon. When the beef turns pale, drain in a colander to remove excess oil. Leave a little oil in the wok, reheat, add scallion and ginger slices, sugar, soy sauce, MSG, and a little water. Bring to a boil, thicken with water starch, add the beef and celery slices, stir well and serve.
