Red-Baked Whole Shrimp
The main ingredient is whole prawns with their shells left on but the veins removed. They are stir-fried with ginger, scallions, and vegetable oil, then simmered with Shaoxing wine, sugar, and salt. The dish is finished over low heat until the sauce is fully reduced.
Once plated, the prawns are arranged with their heads and tails connected, forming a petal-like shape on a large round plate. They resemble a blooming peony—vivid red, bright, and appealing in color, with tender, succulent, and sweet shrimp meat that is rich yet not greasy.
