Salted Fish Pancakes
Salted fish pancakes are a signature street snack in Dalian. Surrounded by sea on three sides, Dalian historically relied on fishing. To return to shore early and sell their catch, fishermen had to set out before dawn, and one meal had to be eaten at sea—salted fish pancakes were convenient and easy to prepare.
For ordinary citizens, in the past, fresh vegetables were scarce in winter, with only cabbage and radishes available. To add variety to meals, small fish—affordable and readily available—became the top choice for housewives. Every household would salt and air-dry some fish each year, and salted fish paired perfectly with cornmeal pancakes. This combination became indispensable for both home meals and packed lunches, eventually making its way to the streets and becoming a famous local snack.
