Hot pot, also known as guozi, was originally a type of cooking vessel exclusively used in the Qing Dynasty imperial court. There are many ways to enjoy hot pot, all of which are quite particular, making it a uniquely beloved winter delicacy in northern China.

In Huludao, there are two common ways to eat it: one is the "shabu-shabu" style, where various thin slices of fresh meat (such as pork, beef, lamb, fish, and shrimp) are briefly cooked in boiling broth and then dipped in sauces. The result is tender, non-greasy, and exceptionally flavorful, with lamb being the most popular and commonly used option.

The other style is clear broth hot pot, where various main and supplementary ingredients are placed directly into the pot along with chicken or meat broth, then heated over charcoal and replenished as you eat. It is characterized by its savory broth and tender vegetables, offering endless enjoyment. If you visit Huludao in winter or early spring, you’ll find almost every restaurant serving hot pot to accompany your meal.
