Gai Zhou’s unique geographical environment and favorable climate contribute to the distinctive quality of its ginger. Xutun is the main producing area of Gai Zhou Ginger. This town is located in the hilly region of southern Liaoning, characterized by a warm temperate continental monsoon climate with four distinct seasons, mild weather, moderate rainfall, and abundant sunlight. The ginger produced here is notable for its large, plump size and smooth skin. It contains compounds such as capsaicin and zingerone, which give it a strong and rich spicy aroma. Gai Zhou Ginger is rich in sugars, proteins, fats, cellulose, minerals, and other nutrients, all of which exceed those found in similar products. Gai Zhou Ginger has a wide range of uses. It serves not only as a seasoning but also as a raw material in food processing and for medicinal purposes. In addition to being used as a flavoring agent, it can be processed into products such as ginger powder, dried ginger, ginger juice, ginger slices, and ginger oil. Due to its low moisture content and relatively thick skin, Gai Zhou Ginger is highly resistant to storage and suitable for long-distance transportation. It is not only sold in major domestic cities but also exported to countries such as Japan, South Korea, and the United States. Currently, the production scale of Gai Zhou Ginger is 30,000 mu, with an annual output of 120,000 tons, making Gai Zhou the largest ginger-producing county in Liaoning Province and giving it a certain level of recognition in the domestic market.
