Honduran coffee has long been known for its mild and elegant flavor. Currently, Honduran coffee production is dominated by smallholder farmers, accounting for over 60% of total production. But have you ever wondered why the long and elaborate names of Honduran coffee beans often feature the name "St. Vincent"? Let’s first talk about the background of this processing facility.

The St. Vincent Processing Plant (Beneficio San Vicente) is arguably the most renowned processing plant in Honduras, and its scale and reputation are the result of decades of dedicated work by the Paz family.

Founder Fidel Paz was involved in the coffee business in the early 1980s. From then on, Fidel Paz spent decades focusing on many production and processing aspects to enhance the reputation of Honduran coffee beans. As international coffee bean prices rose at the time, he also encouraged more local farmers to join the industry.

After twenty years of dedication, by the early 2000s, the St. Vincent Processing Plant had become very successful. By then, Fidel’s nephews and nieces had grown up, and the younger generation, equipped with more knowledge in agriculture, sales, and roasting, joined the effort. Around this time, the trends of "single smallholder" and "micro-lot" processing also began, and many coffee beans with such backgrounds started gaining recognition in the COE competitions.

In 2009, another generation of the Paz family grew up and joined the young team. Every batch of coffee beans goes through professional cupping and grading at the processing plant, and only after rigorous quality control are they released. They also strive to be communicators between the farmers at origin and roasters of all sizes, investing innovative ideas and solid practices to maintain the best quality and flavor from start to finish.

The St. Vincent Processing Plant is committed to not just production and processing, but also has decades of involvement and development in coffee origin regions, import-export trade, and roasting methods. Whenever Honduran coffee is mentioned, most people think of the St. Vincent Processing Plant. With generations of dedication to continuous improvement, St. Vincent has become a symbol of premium Honduran coffee. The plant sources coffee beans from surrounding smallholder farmers, providing strong support in knowledge, technology, and economics. As a result, the coffee produced is known for its high sweetness and rich fruity character, always impressing.
