Instead of using the more common and popular washed processing method for its Geisha beans, Mitra Estate sun-dries them first, reducing the moisture content to an optimal level before hulling. This process requires significantly more labor and time compared to washed processing, but the resulting sun-dried beans develop a rich fermented aroma through prolonged fermentation with the coffee pulp and mucilage, enhancing the coffee's sweetness and flavor complexity.

What are the flavors of these sun-dried Geisha beans? According to cupping tests by Front Street Coffee, the wet aroma of these beans is floral with hints of oolong tea, and the flavor profile includes tropical fruits, peaches, citrus, and honey. Compared to washed Geisha beans, it tastes more like a fruit juice—very unique. Do you like it?
