Naren
Naren is a delicacy from the pastoral regions of Xinjiang, characterized by distinct nomadic flavors. This dish is also known as "hand-grabbed meat" or "hand-grabbed lamb noodles." The preparation involves slaughtering a sheep, removing its internal organs, and cutting the meat into large chunks, which typically take about two hours to cook. Salt and onions are added to the broth. After the meat is taken out, the original meat broth is used to cook noodles or flat noodles. The cooked noodles are drained and placed on a plate, with the noodles at the bottom and the meat chunks on top. The meat is then shredded with a knife, mixed with the noodles, and seasoned with chili flakes, minced onions, and other spices. It is eaten by hand—this is the hand-grabbed lamb noodle dish.
