Stir-fried Grilled Meat
This is an adaptation and innovation of the traditional lamb skewer grilling method. It involves slicing premium-quality lamb, then marinating it with a small amount of fine salt, egg, and wet starch until well combined. The wok or pan is then heated with oil until it reaches about 70% heat. The meat is added, separated, and the excess oil is poured off. Salt, chili powder, and cumin powder are added, and the mixture is stir-fried until the meat is about 70–80% cooked. The dish is bright red in color and bursting with flavor. It is not only beloved by ethnic minority groups but also widely enjoyed by many Han Chinese. (Kashgar)
