Buckwheat Hele Noodles
First, grind the buckwheat into flour, then make either buckwheat diced noodles or hele noodles. They can be served cold with a simple dressing or paired with various meat broth sauces. When served with a lamb broth sauce, the flavor becomes especially delicious and aromatic.
