Ganquan Tofu
Ganquan Tofu is a geographical indication protected product.
Ganquan tofu and dried tofu were originally made using ordinary soybeans. Since the 1980s, they have been produced using the famous premium soybean variety Shuangqingdou (Green Rolling Bean) from Yan’an City. Soybeans are native to China and have been cultivated for over five thousand years. The "Encyclopedia of China: Biology" states: “Among leguminous crops, soybeans have the highest protein content, containing various essential amino acids required by the human body, as well as vitamins A, B, C, D, and are rich in edible oils, making them an important source of protein and oil. Soybeans contain 36–42% protein and 16–20% oil. Tofu, bean sprouts, and soy sauce made from soybeans are among the most common side dishes in China. Ordinary soybeans, commonly known as yellow beans, are rarely green. Shuangqingdou is a rare type of soybean that is green both in its pod and the bean itself, making it highly valuable. As a nutrient-rich crop, Shuangqingdou is even more superior in quality, and its rarity further enhances its preciousness. Its appearance also gives a strong impression as a green food product.
The production area of Ganquan Tofu includes the current administrative regions of Xiawawan Town, Daozhen, Shimen Town, Qiaozhen Township, Laoshan Township, and Meishui Subdistrict Office in Ganquan County, Yan’an City, Shaanxi Province.
