Huangling Minjie
In the northern Shaanxi dialect, "minjie" is pronounced as "minjiēr," with the "jie" sound being rhotacized, hence it is also written as "minjian." The dough used for minjie is made from a mixture of peas and wheat. The prepared dough is placed on a specially designed minjie press with a densely perforated surface, and then pressed down with the palm of the hand to form one-inch-long twisted sections. When served, the minjie is boiled in a pot until cooked, then topped with a vegetarian broth containing diced tofu, potatoes, and green beans. It is also garnished with yellow chives, sesame seeds, chili sauce, and cilantro. The dish has a light and refreshing taste with a hint of bean flavor. It is considered one of the finest among northern Shaanxi noodle dishes and is a must-try for visitors.
