　　Made from finely processed buckwheat into noodle-like strips, these are served with mutton broth from northern Shaanxi, resulting in a delicious and savory taste. In northern Shaanxi, there’s a local saying: “Buckwheat noodles and mutton broth, inseparable in life and death.”
