Kulē
Kulē is also known as "Potato Rub-Rub." First, potatoes are grated into inch-long thin slices using a grater, then mixed with Sichuan peppercorns, shredded scallions, ginger powder, salt, and other seasonings. The mixture is combined with flour, stirred evenly, and steamed in a steamer basket. When serving, it is placed in a large bowl and seasoned with mashed garlic, chili paste, soy sauce, vinegar, scallion oil, or sesame oil. If quickly stir-fried in a wok, the flavor becomes even better. If potatoes are replaced with acacia flowers, elm seeds, or wormwood, it takes on a completely different flavor.
