Buckwheat noodles (Hele)
Made from finely processed buckwheat and shaped into noodle-like strips, these are served with mutton broth from northern Shaanxi, resulting in a delicious and savory taste. In northern Shaanxi, there’s a local saying: “Buckwheat noodles and mutton broth, inseparable in life and death.” Additionally, buckwheat has the benefits of reducing fat and lowering blood pressure. Wuqi County and Zhidan County in Yan’an are major producers of buckwheat, and the hele noodles from these two areas are the most flavorful, available all year round. They are sold at hotels, restaurants, snack shops, and night markets. The typical price is: 5 yuan per bowl. (Yan’an)
