Eshan Boletus
Eshan in Yunnan Province boasts abundant boletus resources, including many excellent edible varieties, mainly white, yellow, and black boletus. White boletus, also known as porcini, grows in mixed pine and oak forests at altitudes between 900 and 2,200 meters, or in recently logged forest edges. Its growing season runs from late May to mid-October each year, and it often appears in greater abundance after rain followed by sunny weather, making it easier to harvest. White boletus is flavorful and highly nutritious. It is cherished by various ethnic groups in Yunnan who enjoy gathering fresh specimens for cooking. In Western European countries, white boletus is also widely consumed. Apart from using it fresh in dishes, most of it is sliced, dried, and processed into small packaged forms for use in soup bases or as soy-sauce infused extracts. Some are also prepared as salt-cured products. Since 1973, Yunnan Province has been exporting white boletus to Western Europe, where it has become extremely popular and remains in high demand.
