Stone Slab Pancakes
Stone slab pancakes are an ancient food of the Derung and Nu ethnic groups in Gongshan County. What makes them unique is that they are cooked on a stone slab used as a pan, with batter spread onto it and then baked. The finished product is sweet, delicious, uniquely flavored, and highly nutritious. These slabs are quarried near Qinglatong in Bingzhongluo Township, Gongshan County. They are fireproof and won’t crack when soaked in water. Used as a cooking pan, the stone slab is placed over a tripod hearth to bake the pancakes. No oil is needed, yet the pancakes won’t stick to the stone surface. The resulting pancakes are especially fluffy and aromatic.
