Yunnan Spring Rolls
Yunnan Spring Rolls are a popular and widely enjoyed snack. Different regions across China have their own unique methods and flavor profiles for making spring rolls. Yunnan Spring Rolls were created through the long-term culinary practices, refinements, and innovations of the people of Yunnan, setting them apart in taste from spring rolls in other parts of China and highlighting the distinct local characteristics of the region. The filling of Yunnan Spring Rolls is meticulously prepared, using carefully selected ingredients and finely diced components. The wrapper is spread thin, and once fried, the rolls should be crispy, fragrant, and golden in color with an even hue. The texture is crunchy on the outside and tender on the inside, with a hint of savory juice, balanced saltiness and sweetness, and a deliciously fresh and aromatic taste.
Yunnan Spring Rolls are rich in fillings and are seasoned with sweet soy sauce. Special emphasis is placed on adding Chinese toon shoots and chives to symbolize the arrival of spring, the revival of all things, and the vibrant spirit of the season. The finished rolls are golden in color, neatly arranged, and visually appealing, with a crispy exterior and soft interior. They strike a balance between salty and sweet, featuring a delicious and savory filling. Dipping them in vinegar enhances their refreshing and appetite-stimulating qualities.
Ingredients:
Main ingredient: 150g of flour
Secondary ingredients: 100g of starch, 200g of fresh minced pork, 80g each of Chinese toon shoots, bean sprouts, and chives, 3 eggs, 20g each of soaked golden hooks (dried shrimp), magnolia slices, and minced mushrooms, 30g of minced ham
Seasonings: 14g of fine salt, 30g of sweet soy sauce, 20g of regular soy sauce, 5g each of monosodium glutamate (MSG) and pepper
Preparation method:
(1) Stir-fry the minced pork, golden hooks, magnolia slices, minced ham, and minced mushrooms in a pan until fragrant. Add soy sauce, 10g of salt, MSG, and pepper, then stir to form a clear sauce and transfer to a bowl. Briefly blanch the bean sprouts, chives, and Chinese toon shoots in boiling water, then chop them finely and mix into the filling.
(2) Mix the flour, eggs, starch, and 4g of salt with water to form a smooth batter. Heat a pan and lightly grease it with fat. Pour in the batter to form a round shape, then cook over low heat. Once cooked, peel it off and divide it into 6 equal sectors from the center, forming fan shapes. Fill each sector with the prepared filling, then wrap it into a rectangular strip measuring approximately 6cm in length and 3cm in width.
(3) When the oil reaches about 70% heat, fry the rolls until golden brown. Remove and drain the excess oil, then serve with a dipping sauce.
