Green tea is made from unfermented leaves, preserving the natural substances of fresh tea leaves. It contains a rich array of nutrients such as tea polyphenols, catechins, chlorophyll, caffeine, amino acids, and vitamins. These natural components in green tea offer special benefits, including anti-aging, cancer prevention, antibacterial, and anti-inflammatory effects, surpassing other types of tea. Green tea is produced from the tender shoots of suitable tea plants through typical processing steps such as fixation (kill-green), rolling, and drying. The dry tea leaves, brewed tea liquor, and leaf base all predominantly exhibit green hues, hence the name "green tea." The process involves high-temperature fixation of freshly picked leaves to deactivate various oxidizing enzymes, maintaining the tea's green color, followed by rolling and drying. The common characteristics of high-quality green tea include a clear broth and green leaves.
