Nuomi (Sticky Rice) Delicacies of Yun County
The making of nuomi delicacies, particularly yuan tang ba (round glutinous rice cakes), is very meticulous. The main ingredient is glutinous rice, mixed with an appropriate amount of sticky rice. It is then ground into flour using a stone mill, sifted through a sieve, and the fine powder collected is placed in a basin. Cold water is added to mix and soak the powder evenly. The mixture is then shaped by hand into round cakes, filled with sesame sugar, and finally steamed to perfection. These round glutinous rice cakes are soft, smooth, and rich in the aroma of glutinous rice and sesame, making them very popular locally.
