Liangjiang Fish
The captivating Liangjiang River is the largest river in Huishui County, flowing right through the county town. The Liangjiang has numerous tributaries, each with sources and river sections that offer stunningly beautiful scenery and abundant aquatic resources, resulting in a wide variety of delicious Liangjiang fish dishes. The signature spicy boiled fish on South Liangjiang Road in the county town features live and fresh Wujian River fish as the main ingredient, along with scallions, ginger, garlic, Sichuan peppercorns, chili pods, pepper, sesame, cooking wine, chicken essence, monosodium glutamate, wild chili peppers, celery, sesame oil, and fish-flavored herbs as auxiliary ingredients. It is seasoned with starch paste, egg white, and broad bean paste. The dish delivers a numbing, spicy, fragrant, and soft texture, with the fish bones and slices well-separated and no bones to worry about—leaving an unforgettable aftertaste.
