Preparation method for the Miao Golden Ball Glutinous Rice Cake:

  (1) Soak 70% glutinous rice and 30% sticky rice until swollen (the sticky rice should be soaked in water for one hour before adding the glutinous rice), then grind them into a slurry and squeeze out the water using a cloth bag.

  (2) Knead the partially watery rice flour paste into balls about the size of duck eggs, then boil them in hot water until cooked.

  (3) After boiling, place the balls into a rolling mixture (made from roasted soybean flour, sesame powder, five-spice powder, and white or brown sugar), and gently roll them—either in a basin or by hand—until they form round balls completely coated with the powder. This rolling and coating process is locally referred to as "Horse Roll" or "Glutinous Cake Bath." Because the balls are white and the powder golden, they are also called "Golden Ball Glutinous Rice Cake."
