　　Shahe Duck is a specialty of Shahe Town, Gao County, Yibin City, Sichuan Province. Known for its appealing color, fragrant meat, and delicious taste, it has won the hearts of consumers and become a well-known local delicacy. It's a popular dish for entertaining guests and a premium gift for friends and family.

　　Shahe Duck is made from well-marbled, tender ducks raised in Shahe that have not laid eggs or molted. After slaughtering, the ducks are plucked, gutted, and placed in a brine vat with a unique blend of spices for curing. The curing time varies by season. Once cured, the ducks are taken out, spread open using bamboo sticks (not too wide), ensuring air reaches every part of the body. After the moisture is dried out, they are smoked and roasted repeatedly over a low flame using special fuel to become the final product. "Shaheyi Duck" by Boss Zheng from Shahe has been certified as a green food product by the Ministry of Agriculture.　

　　Shahe Duck is easy to preserve for long periods and transport over long distances; it can also be further processed into various dishes. Depending on different tastes, it can be prepared as red-cooked duck, mixed stew duck, steamed duck, crispy fried duck, sweet and sour duck, spicy duck, and more. You can try it in local farmhouses, restaurants, and eateries throughout Shahe. The crispy fried duck from Uncle Hu on the street is also quite good.
