Fried Rice Cake
Fried Rice Cake is a popular snack in Neijiang. It is made by soaking glutinous rice until soft, steaming it, and then forming the cooked rice into small fist-sized balls. Each ball is filled with sweet red bean paste, primarily made from azuki beans, and seasoned with salt and ground Sichuan pepper. The glutinous rice balls are then flattened into cakes and deep-fried in hot oil until golden brown.
It is characterized by a crispy exterior and soft interior, rich in flavor yet not greasy, and leaves a pleasant aftertaste. Legend has it that this snack was first created by a small eatery at the entrance of Muban Bridge in Pimu Town, where it quickly gained popularity and spread to Neijiang city. It came to be known as “Banbanqiao Fried Rice Cake.” To this day, Fried Rice Cake remains a beloved snack among locals, with numerous shops and stalls throughout the city specializing in it. Made fresh and served hot, it tastes especially delicious when eaten right out of the frying pan.
