An Gongqiao Fried Tofu
Fine and soft, porous yet crispy, golden in color, with a firm exterior and a web-like interior that is elastic. It remains unspoiled for half a month. Can be used as a main dish for steaming, stir-frying, or stewing, and also serves as an ingredient in various meat dishes. Paired with cellophane noodles, it can be made into “Silver Threads Suspended over a Gourd,” or combined with bean sprouts to create “Curved Hook Playing with the Monk.” As an ingredient, it stays tender even after long stewing and tastes delicious when served cold in a salad.
