Mandarin Duck Steamed Dumplings

Mandarin Duck Steamed Dumplings are a popular snack from Guang’an City, Sichuan Province. These dumplings are crafted with great care in terms of ingredients and varieties, and can be prepared by boiling, steaming, or pan-frying.

Mandarin Duck Steamed Dumplings are meticulously crafted in terms of ingredients and varieties, and come in more than 30 flavors including seafood trio and both meat and vegetarian fillings. The specially made dumpling wrappers are neither sticky nor doughy, with excellent elasticity and no visible flour specks. The filling is never stringy or clumpy—rich yet not overpowering, light yet not bland, free of fishy or gamey odors, and bursting with delicate fragrance and lingering aroma. It's like savoring a fine jasmine tea, only to have a pure and refined fragrance rise from deep within your chest, leaving a lasting aftertaste. HWA

[Main Ingredients] 400g wheat flour, 300g pork (fat and lean), 200g water chestnuts, 200g yellow chives. Accessories: 300g spinach.

[Seasonings] 10g salt, 10g white liquor, 10g ginger juice, 10g scallion juice, 10g sesame oil.

  [Method]

  1. Take 200g of flour, add an appropriate amount of water and 2g of salt, knead into dough. Then divide the dough into small pieces and roll out into dumpling wrappers.

  2. Wash the spinach, chop it, wrap it in cheesecloth, and squeeze out the spinach juice. Mix the spinach juice, 3g of salt, and the remaining flour, then knead into a jade-green dough. Divide into small pieces and roll out into wrappers.

  3. Finely mince the ground pork, mix in all seasonings (liquor, 5g salt, scallion juice, ginger juice, sesame oil), blend well, then add chopped water chestnuts and yellow chives to make the dumpling filling.

  4. Wrap the filling in both types of wrappers, fold and pinch the edges. Then combine one of each color together and pinch to seal.

  5. Place the finished Mandarin Duck Dumplings in a steamer basket, steam over high heat for 10 minutes until cooked, then serve.
