Xiushan Free-Range Chicken Soup
Free-Range Chicken Soup
When you come to Xiushan, you must try the legendary free-range chicken soup. The chicken soup in Xiushan is not stewed or boiled—it is slowly simmered. A whole free-range chicken is used, rinsed clean with water, then seasoned with a bit of ginger, Sichuan peppercorns, salt, and water. It is simmered until the skin breaks and the bones become soft, and the soup turns milky white before it is taken off the heat. Topped with a small sprinkle of chopped scallions, a fragrant bowl of free-range chicken soup is ready.
