Slippery Pork Rice Noodle Rolls
Also known as “Pork Intestine Noodles,” they are named for their resemblance to pig intestines. The preparation involves wrapping minced slippery pork in a sheet of rice noodle, rolling it into a log, then cutting it into about 8 cm segments. These are steamed until cooked, then topped with uncooked oil, cooked oil, fermented spicy sauce, seafood sauce, and other condiments before serving.
