  Rong'an Snail Noodles

Snail noodles have a distinctive flavor that is sour, spicy, savory, refreshing, and hot. They are ranked as the top snack in Liuzhou. Made with the city’s uniquely soft and smooth rice noodles, they are mixed with toppings like pickled bamboo shoots, wood ear mushrooms, peanuts, fried tofu skin, daylily buds, and fresh greens, along with a bold and well-balanced sour-spicy flavor and the broth from boiled snails. The uniquely delicious snail soup makes people want to have a second bowl right after the first.

Whenever people from Liuzhou return home, the first thing they do is find a bowl of snail noodles to ease their homesickness.

Snail noodles are the most famous and widely loved noodle snack in Liuzhou. Much like Stephen Chow’s “nonsense” comedy, they can be found everywhere in everyday life, ready at hand.

As for the origins of snail noodles, I’ve asked many small noodle stall owners, but no one has been able to give a clear answer. Even though the origins remain unclear, this doesn’t stop snail noodles from being one of Guangxi’s most renowned snacks.

However, there’s something many people might not know, including locals from Liuzhou — that is, where snail noodles first appeared. Were they born in downtown Liuzhou or in the suburbs? Let me tell you, the origin of Liuzhou snail noodles can be traced back to Rong'an, Liuzhou. From Rong'an, they made their way to Liuzhou, where they gained fame, became popular across Guangxi, and even won praise from many friends in other provinces.
