Seasonal ingredients are selected for the mix, such as legumes (large white beans, large green beans, soybeans), vegetables (sweet potato, potato, pumpkin, winter melon, fresh green beans, carrots, white radish, celery, dried green beans, pumpkin strips), and wild greens (bitterweed, yugu vegetable). The variety can be more or less, and the quantity can be adjusted according to personal preference—take what you like and keep it moderate. Seasonings typically include chopped scallions, garlic slices, salt, cooking oil, and vinegar, which are stir-fried in the pot. The specific cooking method is as follows: boil water in a pot over high heat, first add the legumes, millet, and let them simmer briefly, then add the quicker-cooking vegetables. Once they are cooked, add thin wheat noodles and sanhe noodles, bring to a boil until done, then add salt to taste before removing from the heat. Separately, heat cooking oil in a ladle over the fire, fry chopped scallions or garlic slices until fragrant, add vinegar to make a sauce, then pour it into the “hezifan” and stir well.
