Lexian Village in Xinbei, Xingning, is known for its beautiful scenery with clear mountain springs and sweet water. The history of processing yuba in the village dates back to the Ming Dynasty.
In the late Qing Dynasty (1907), Dai Hongzhao from Daihu in Lexian Village learned the yuba-making technique from the Dai family in Tietang, Longchuan County, and traveled to Heshi in Longchuan to have a yuba pot cast (with copper added). Combining this with his own technical expertise, he selected green beans from Gubei, Xinfeng, Jiangxi, burned lugrass, and produced yuba that was golden yellow and semi-transparent. It cooked easily, produced white soup, and had a light and delicious flavor.
The villagers of Lexian in Xinbei use high-quality soybeans and mountain spring water as raw materials, and through a combination of traditional techniques and modern technology, produce yuba that is golden yellow, sweet and delicious, and rich in protein, amino acids, calcium, and other essential nutrients needed by the human body. It can be used in both meat and vegetarian dishes, and is suitable for stewing, frying, braising, or boiling. With its delicious taste, unique flavor, rich nutrition, and widespread fame both at home and abroad, it is well-known throughout the Xingning region and is recognized as a green food that contributes to longevity.
