Sweet Potato Starch Tofu
Sweet Potato Starch Tofu
Fengshun’s snacks are not only delicious but also highly distinctive to the region. Under the dim yellow lights from one end of the snack street to the other, the arrayed foods look as warm and dreamlike as the “props” used in childhood games. It’s not until you take a bite that you experience the genuine sweet fragrance of everyday home cooking.
Made from soybeans and sweet potato starch, the snack undergoes multiple processes such as grinding into pulp, filtering,
boiling, making the slurry, pressing out water, and boiling in water. After being deep-fried in peanut oil, the sweet potato starch tofu becomes even more delicious.
Among all the snacks, the most distinctive one is made by kneading sweet potato starch into tofu shapes, then deep-frying them thoroughly in oil. A light vinegar seasoned with minced garlic is served on the side — the texture is soft and tender, with a pale green filling inside, offering a double delight for both taste and sight.
Another portable snack is candied pomelo peel. The eastern Guangdong Hakka region is already famous for its Shatian pomelos. The fragrant pomelo peel, infused with white sugar, leaves a lingering freshness in the mouth — truly a “solidified pomelo tea.”
