Xijia Scallions have a long planting history, dating back to the Qing Dynasty when they were sold in Taiyuan and various parts of Henan. Their characteristics include roots as white as jade, green leaves, long stems and short leaves, a strong pungent flavor, long storage life, and the unique trait that the chopped scallions naturally spread out in the pan without clumping. When used in cold dishes with garlic, they offer a distinctive flavor — you get the feeling of a "cold dish that's not cold," creating a refreshing and pleasant taste; they also have unique medicinal properties, such as enhancing virility, nourishing kidneys, dispelling wind-cold, and reducing spleen heat. Regular consumption is beneficial to health. According to Traditional Chinese Medicine research, these scallions are warm in nature, harmonize various flavors, and especially when paired with lamb, they both warm the stomach and eliminate odor, making them one of the favorite vegetables of the people in Shangdang.
