Shangdang Jiupian
Shangdang Jiupian are hand-pulled noodles made by pinching small pieces of dough from a larger sheet. Whether in the urban areas or rural villages of Changzhi, these noodles are a common household dish.
The kneaded dough is rolled out into thin sheets, then pieces are pinched off one by one into small, button-sized discs with a slight indent in the middle, and tossed into a boiling pot. The noodles are done once they float to the surface. These Jiupian are chewy and full of flavor.
