The chives grown in Xishan Village, Yincheng Town, Changzhi County, have slightly red roots and tender green leaves. They give off an inviting fragrance when sniffed and taste pure and refreshing when eaten—earning deep affection from locals far and wide. Their cultivation process is extremely meticulous: in winter, fertilizer is applied to nourish the roots; after sprouting, regular fertilization and watering are carried out, and all weeds are removed. Then, another round of fertilization, watering, and weeding is done. Because only organic manure is used and water comes from a dedicated well, the resulting chives have plump leaves and sturdy stems, with not a single weed in sight, and a pure flavor free from any off-tastes. These chives are rich in various minerals and trace elements beneficial to the human body, helping to invigorate the spirit, promote saliva production, nourish yin, and enrich blood—making them an ideal vegetable for those suffering from iron-deficiency anemia. Their main characteristics are a strong and refreshing aroma, high nutritional value, and the fact that when eaten, they only stick to the bread or noodles—not the bowl. Western Shan Chinese chives are renowned across the Shangdang region for their unique qualities.
