Shuibu (Siujiu) Fragrant Sweet Potato
Shuibu (Siujiu) Fragrant Sweet Potato is a type of sweet potato with slightly pinkish, double-layered thin skin, yellow flesh, and a white sugary core that is filling. Although it is produced in various parts of Taishan, the ones from the Shuibu area are the most renowned. The flesh has a slight yellow hue, and when cooked, the white core becomes fluffy, sweet, and fragrant. When baked dry, it emits a rich aroma, distinguishing it from ordinary sweet potatoes, hence the name "Fragrant Sweet Potato." During the Japanese occupation, when food was extremely scarce, it played a vital role in sustaining many locals and could truly be called an "invaluable life-sustaining treasure" at the time.
