Scooped rice
Scooped rice
In some mountainous areas of Yangxi, people enjoy eating scooped rice (捞饭). To make it, rice is boiled in water, then scooped out with a bamboo utensil and steamed in a pot for a few more minutes until fully cooked. This type of rice is said to have a mild, sweet taste, help reduce internal heat, be easy on the palate, and the rice cooking water can even be drunk like tea. This method is still popular in some rural villages of Yangxi today.
