Geshen Thick Porridge
Corn has relatively low requirements for soil and climate. In Lingchuan, a mountainous region with limited flat land and cooler temperatures, corn yields are high. Rich in crude fat, which aids digestion, and containing various minerals and vitamins, corn is a staple food in the daily diet of Lingchuan residents. Every morning, locals make "Geshen" into "thick porridge."
"Geshen" refers to coarsely ground kernels made from mature corn. When cooked by boiling, it becomes "thick porridge," often served with stir-fried potato slices as the essential first meal of the day for people in Lingchuan. Ground corn can also be made into cornmeal, used to prepare foods such as corn cakes and corn pancakes.
