Hunan-style Boiled Fish
Hunan-style Boiled Fish mainly uses grass carp, common carp, and crucian carp raised in net cages, preferably those from river net cages. The most distinctive feature of Hunan-style fresh fish dishes is the minimal use of seasonings—just salt, ginger, perilla, and fresh green chili peppers—with tea seed oil as the primary cooking oil.
Method
First, slaughter the fish, marinate it with salt for 15 minutes, and make sure to rinse the fish again with water before putting it into the pot; pan-fry the fish skin with tea seed oil, then add salt, ginger, perilla, fresh green chili peppers, and water to cook the fish; simmer for about 20 minutes, add an appropriate amount of salt, and serve.
