Wenxi Flower Steamed Buns
Wenxi Flower Steamed Buns are a national intangible cultural heritage.
Wenxi Flower Steamed Buns are a specialty of Wenxi in Yuncheng, Shanxi.
Wenxi Flower Steamed Buns are a traditional Han Chinese delicacy from Wenxi County, Yuncheng City, Shanxi Province. These are steamed buns manually crafted into various shapes and designs, hence the name "flower steamed buns." Wenxi Flower Steamed Buns were popular during the Ming and Qing dynasties, boasting a history of over 1,000 years. Through continuous inheritance and development to this day, they have gradually formed a unique artistic style and a complete creative system, rich in cultural significance and strong local characteristics. Wenxi Flower Steamed Buns come in four major series — “Flower Cakes,” “Flower Steamed Buns,” “Lucky Charms,” and “Plate Tops” — with more than 200 varieties.
Over thousands of years of inheritance, Wenxi Flower Steamed Buns have not only been infused with rich cultural meaning but have also developed unique craftsmanship techniques. These include more than ten processes such as kneading, rounding, twisting, rolling, cutting, slicing, pricking, pressing, pinching, and coiling. The tools used are very common, including rolling pins, scissors, chopsticks, combs, and bamboo skewers. There are no textbooks or patterns for making flower steamed buns — the skills are passed down orally from generation to generation, with all the designs kept in the artisans’ minds. The artisans transform dough of various sizes into exquisitely shaped, lifelike artworks.
The production process of Wenxi Flower Steamed Buns is highly meticulous. From the selection and sun-drying of wheat to flour processing, from fermentation and dough rising to shaping and steaming, as well as final forming and coloring, every step is executed with precision. It takes at least four to five days to make a decent flower steamed bun. A single bun involves nine major procedures: water coagulation, flour sifting, fermentation, dough kneading, shaping, proofing, steaming, coloring, and inserting dough flowers, along with over 100 minor steps, all done entirely by hand through kneading and shaping.
Ingredients
First and foremost are the ingredients — wheat. Wenxi County is located in the southwest of Shanxi Province, in the northern part of the Yuncheng Basin, and is a major wheat-producing county and a base for high-quality wheat in Shanxi. Surrounded by mountains on three sides, Wenxi has a typical warm temperate continental climate with distinct seasons, fertile land, and the flower steamed buns here use flour made from the highest quality wheat from Beiyuan in Wenxi. Beiyuan lies in the heart of the Emei Ridge and is known for its wheat, which has a longer growth period — several dozen days longer than other regions — resulting in larger, plumper grains and superior wheat quality. Steamed buns made from this wheat flour are fragrant, chewy, and nutritious, with a naturally sweet taste. Not only is Beiyuan wheat used, but so is the local water. Due to Beiyuan’s higher elevation, the water is deep and of high quality. Therefore, only flower steamed buns made with Beiyuan wheat flour and Beiyuan water are considered the most authentic, delivering that signature sweet flavor.
Production
Once the ingredients are selected, the next step is kneading the dough. In the past, when stone mills were used, the first two rounds of flour were chosen for flower steamed buns. Today, the finest premium flour is selected. Meticulous artisans may even sift the flour through a flour sieve before using it. When making flower steamed buns, the “fermentation water” is prepared the night before. The next day, the fermented water is mixed with flour, water is added to form the dough, and then the kneading begins. Artisans knead the dough by folding and unfolding it repeatedly, no less than eight times, to achieve a smooth and elastic texture. Many artisans also add an appropriate amount of vinegar to the flour while kneading, resulting in steamed buns that are white and shiny. Others add sugar water, milk, or honey, which helps prevent the buns from cracking.
Next comes the “proofing” stage.
This means letting the dough rise slightly. The shaped dough pieces are placed in a heated steamer ring, with a bowl of hot water placed in the center of the ring. The whole setup is covered tightly with a cotton quilt to maintain proper temperature and humidity, ensuring the flower steamed buns do not deform, crack, or dry out, remaining moist and smooth. Once the dough has proofed, it is ready for steaming. The actual steaming process also involves expertise — such as using boiling water to start the steaming, quickly bringing the steam up, sealing the steamer ring tightly, remembering to release steam as needed, steaming different sizes separately, and removing the buns only after the steam has subsided.
After the steamed buns are taken out of the steamer, the final step is to color them while they are still hot, which ensures bright, long-lasting colors. Once colored and dried, any auxiliary parts or decorative petals that need to be assembled are put together using bamboo skewers. At this point, each exquisitely designed, uniquely shaped, and vibrantly colored dough sculpture is ready to be presented.
