The flower steamed buns of Wenxi County in Yuncheng City, Shanxi Province, are a local distinctive food. They are handmade steamed buns in various shapes and styles, hence the name “flower steamed buns.” Wenxi flower steamed buns have been included in the second batch of the National Intangible Cultural Heritage List. Based on function, they can be divided into purely ornamental and both edible and ornamental types. By shape, they can be classified into cake type, bun type, mascot type, and plate-top type. Broadly speaking, there are hundreds of patterns. By use, they are categorized into festival and ritual offerings, birthday celebrations, house-raising ceremonies, engagement and wedding events, and funeral rites.

  Characteristics of Flower Steamed Buns

In terms of design, for the cake type, themes include dragon-phoenix cake, four-dragon-eight-phoenix cake, twelve-zodiac cake, pomegranate-basket cake, nine-lions-(nine-generations)-with-chrysanthemums-(harmonious-home) cake, great-fortune cake, wealth-inviting cake, double-joy cake, top-scholar-parade cake, and carp-leaping-the-dragon-gate cake. Flower cakes are the pinnacle of dough modeling, some weighing nearly 20 kilograms, consisting of four layers—the bottom layer as the base, then a middle layer of cloud clusters with red dates, followed by the cake surface. These three layers form the edible base. The topmost layer is the decorative pattern layer, featuring motifs such as the Eight Immortals crossing the sea, mythological tales, love stories, floral and bird designs—creators can depict whatever they wish, with a central theme of luck and beauty. Flower cakes are used as gifts; in weddings, they are called headdress cakes; for house-raising, they are roof-raising cakes; for birthdays, longevity cakes; for festivals, basket or layered cakes.

Flower steamed buns have broader usage than flower cakes, suitable for joyous occasions, funerals, festivals, daily interactions, and more. They come in large flower buns, paired buns, date-flower buns, wonton buns, pomegranate buns, etc. Some can weigh over ten kilograms—comparable to flower cakes—while others are as small as dates. Common sizes are around two jin or half a jin. The more intricate the pattern, the less edible but the more ornamental the bun becomes. Zhi Jiankang said that ornamental buns can be preserved for long periods—even when dried, they remain visually pleasing.

Plate-tops are inedible and are exclusive items for ritual ceremonies. They are dough art pieces placed atop food baskets, featuring human figures and animals. The animal designs reflect strong local characteristics, while the human figurines represent a widely practiced handicraft art.

In Wenxi, flower steamed buns have become a commercial product. Those who need them for daily use can order custom ones from local bun shops. The dough used is made from Beiyuan wheat flour. Beiyuan flour is white, elastic, and firm, attributed to the quality of Beiyuan wheat (grown at high altitudes with long growth cycles and abundant sunlight), as well as Wenxi’s fermentation and kneading techniques. Beiyuan buns do not use baking powder or alkaline agents for fermentation, but instead rely on dough starter. This starter is made from cornmeal and involves highly challenging processes with very delicate techniques. Poor-quality starter results in subpar buns. This is even more critical for flower steamed buns. For the dough, premium flour is selected—finer than that used for regular buns—and must be sifted through the finest flour sieves. The fermented starter is mixed with flour, water is added, and the dough is kneaded repeatedly—at least eight times of folding and stretching—to achieve a shiny, elastic texture. Adding an appropriate amount of vinegar makes the buns whiter and smoother; adding sugar syrup, milk, or honey not only sweetens the buns but also prevents them from drying or cracking, extends shelf life, and preserves the aroma of the wheat.
