Cuttlefish tofu strips
Cuttlefish tofu strips
Cuttlefish tofu strips is a famous dish popular in the Panjiabu and Jinbaotang areas of Qiyang County. The main ingredients of this dish are cuttlefish, tofu, and shredded meat. The soaked cuttlefish and lean meat are both cut into shreds, stir-fried lightly in tea oil without adding salt, then scooped out and set aside in a small bowl. Select white, tender tofu blocks and slice them into long, thin strips (about 3 cm long), which are then lightly stir-fried over low heat in tea oil. Next, add the previously stir-fried cuttlefish and meat shreds, along with seasonings such as lard, scallions, garlic, celery, chili, monosodium glutamate, and soy sauce, plus a small amount of water, and stir-fry and simmer over high heat. Some also add shredded bamboo shoots or carrots to enhance the flavor and color. This dish is a perfect combination of meat and vegetables, bringing together the nutritional essence of beans, meat, and seafood. With its excellent color, aroma, and taste, it is truly a fine delicacy fit for any banquet.
