Tujia Fried Rice
Tujia fried rice, also known as puffed rice, is made by steaming glutinous rice until cooked, letting it cool, then drying it in the sun. It is then puffed in an iron pan using fine gravel. Aside from being served with hot water, it can also be mixed with corn sugar or sweet potato sugar to make fried rice cakes or candy.
