Live oysters are shucked, and the oyster meat and one shell are rinsed clean with water, and the meat is drained and set aside. Charcoal-grilled oysters can generally be divided into three flavors: garlic, black bean sauce, and original. Garlic sauce: finely chop garlic, and if you like spicy food, add some chopped red chili peppers. Mix the garlic paste, chili paste, and oil, then add salt and monosodium glutamate (or chicken essence), stirring well, with slightly more salt.

Black bean sauce: finely chop fermented black beans and garlic, and you can also add chopped chili peppers, then mix them with oil, salt, and other seasonings.

Place the cleaned half-shells on the charcoal fire, putting one oyster meat on each shell. While grilling, add the sauces mentioned above. For the original flavor, just brush a little oil on the oyster meat and sprinkle a bit of salt. Once you hear a sizzling sound, flip the oyster over, add more sauce, and grill briefly.
