Water-grown ginger — with over a hundred years of cultivation history, it is one of Shandong’s renowned vegetable products and a major export variety of ginger in China. The main local cultivar — flake ginger: exhibits strong growth vigor, typically reaching a plant height of 70–80 cm, with lanceolate leaves and emerald green foliage. It has strong branching characteristics, with each plant having 10–15 branches, and sometimes over 20, belonging to the dense-sprout type. The rhizomes have yellow skin and flesh, numerous tightly arranged ginger bulbs, and relatively short internodes — plump. The rhizome flesh is tender, rich in spicy aroma, of excellent quality, and highly resistant to storage and transport.
