Smoked Bamboo Shoots with Pork from Jinggangshan
The 800-li (400-km) expanse of Jinggangshan is an ocean of bamboo, where various types of bamboo shoots are easily dried into bamboo shoot strips. The shoots are boiled and then roasted over charcoal until dry, turning dark brown—thus called smoked bamboo shoots. When used to cook pork, the meat becomes richly flavorful while the bamboo shoots offer a long-lasting taste.
