Suichuan Dried Duck
Suichuan Dried Duck is a geographical indication certification trademark.
Suichuan Dried Duck, commonly known as "pào yān," was originally made from locally bred Suichuan sesame ducks. The ducks are carefully raised before being processed after slaughter. Suichuan Dried Duck boasts an attractive appearance, with a flat, peach-shaped form, neat cuts, intact skin, a smooth and hairless surface, and a milky-white skin tone. Its meat is dry, tender, and moderately fatty, with a well-balanced saltiness. The bones are crisp and chewy, the tail is rich in fat, and the flavor is deliciously aromatic with a unique taste.
After the 1990s, the production scale of dried duck expanded significantly, encompassing county-run, township-run, village-run, and individually operated processing facilities. In 1991, township-operated dried duck processing plants such as those in Zhutian, Yaoxia, Penzhu, Jinshi, Yutian, and Meijiang had an annual production capacity of 80,000 ducks. In 1991, the total processing volume reached 1.518 million ducks, with 500,000 exported via foreign trade to markets in Hong Kong and Southeast Asia, generating foreign exchange earnings of 6 million Hong Kong dollars. The remainder was mostly sold to major cities in Guangdong, Guangxi, and Fujian.
Starting in 1996, Suichuan vigorously developed and utilized the resources of the Ji’an Red Feather Duck, making it the primary breed used in the production of Suichuan Dried Duck. Ducks of this breed yield dried duck products with fewer feather roots, whiter skin, higher lean meat content, and a 20% increase in export rates compared to previous breeds. In 1999, the Ji’an Regional Bureau of Technical Supervision issued the enterprise standard for the dried duck products of Suixing Dried Duck Co., Ltd. Since then, the production process of dried duck has been standardized and regulated, enhancing product quality and output, as well as expanding the market. Just the company’s 20 affiliated dried duck processing enterprises produced 2 million ducks annually. New products such as vacuum-packed and gift-boxed cardboard packaging were continuously introduced, further broadening the sales market. In addition to the original markets in Southeast Asia and domestic regions such as Guangdong, Guangxi, and Fujian, new markets were developed in provinces and cities including Hunan, Shanghai, Zhejiang, and Beijing. In the same year, Suixing Dried Duck Co., Ltd. was established, and in September 2000, the “Suixing” trademark was registered, marking the end of over 80 years of using the “Nan’an” dried duck trademark for Suichuan Dried Duck. In 2002, “Suixing Dried Duck” was recognized as a famous trademark of Jiangxi Province.
