Soft Soup Skin
Made by grinding rice with water into a slurry, pouring it into a bamboo tray to form a thin layer, steaming it in a pot until cooked, and ready to eat. Seasonings can be added as desired, either mixed into the slurry before steaming or served on the side. It can also be eaten with cooked soup skin, or the cooked skin can be cut into small pieces or strips and dried for later use. The strips are often boiled, commonly known as water soup skin or soup skin strips. Soup skin stalls and shops can be found in both urban and rural areas. Water soup skin from Xincheng and Chijiang is especially renowned. Often seasoned with spices, it is both affordable and delicious, famous both within and beyond the county. The pieces are sometimes deep-fried or stir-fried with sand, and are commonly served as welcome gifts or treats for guests.
