Ruijin Lei Cha
is a unique dish of the Hakka people, passed down through generations and widely enjoyed in Ruijin. Lei Cha is made by pounding a suitable amount of rice together with sesame seeds, peanuts, mung beans, soybeans, tea leaves, tangerine peel, and other ingredients, then simmering the mixture. It has a distinctive flavor—fragrant, slightly bitter, with a grayish-green color and a thin, murky paste. Adding a bit of sesame oil when drinking makes it especially delicious.
